Everything to eat and drink in Morocco — traditional dishes, street food, regional specialities, cooking classes and dining etiquette.

Moroccan cuisine is one of the world's great food cultures — a complex layering of Amazigh, Andalusian, Arab and French influences, built around slow cooking, spices, and the ritual of mint tea. This guide covers the dishes, the street food, the regional specialities and the best ways to eat your way through Morocco.

The spice and food souks of Marrakech, Morocco

The Essential Dishes

Street Food

Moroccan street food is a highlight. Look for: grilled sardines and kefta skewers, fried calamari, msemen and beghrir from bread stalls, bissara for breakfast, snail soup in Jemaa el-Fnaa, fresh orange juice on every corner, and chebakia (sesame cookies). Eat at busy stalls with high turnover. The Jemaa el-Fnaa evening stalls are the classic experience. See our Marrakech food tour by night.

Regional Specialities

Cooking Classes

A cooking class is the best food experience in Morocco. You shop in the souk with a chef, learn the spice palette, then cook a multi-course meal — usually a tagine, a salad, bread and a dessert. Marrakech and Fez have the best classes. See our Marrakech cooking class & market tour.

What to Drink

Mint tea is the national ritual — poured from a height, very sweet, and offered everywhere as a gesture of welcome. Fresh orange juice is excellent and everywhere. Coffee is good in cafes. Morocco is a Muslim country; alcohol is available in hotel bars and some restaurants but not in local cafes or the medina.

Dining Etiquette

Moroccans traditionally eat from a shared dish using the right hand and bread as a utensil. Wash your hands before eating, use only your right hand, and take food from the part of the dish nearest you. In riads and restaurants, cutlery is normal. Accept mint tea when offered — it's a gesture of hospitality.

Frequently asked questions

What is the national dish of Morocco?

There isn't one official dish, but tagine and couscous are the two pillars. Tagine is a slow-cooked meat-and-vegetable stew named after the conical clay pot it's cooked in. Couscous is the traditional Friday lunch, steamed semolina served with meat and vegetables. Both are eaten everywhere.

Is Moroccan street food safe?

Largely yes — eat at busy stalls with high turnover, watch food being cooked fresh, and avoid raw salads in very hot weather. The Jemaa el-Fnaa evening stalls in Marrakech are regulated and busy. Use standard traveller judgement. See our food tours.

What should I drink in Morocco?

Mint tea — the national ritual, poured from a height and very sweet. Fresh orange juice is everywhere and excellent. Coffee is good in cafes. Morocco is a Muslim country; alcohol is available in hotel bars and some restaurants but not in local cafes or the medina.

Should I take a cooking class in Morocco?

Yes — it's one of the best things to do. You shop in the souk with a chef, learn the spice palette, then cook a multi-course meal. Marrakech and Fez have the best classes. See our Marrakech cooking class.
